Cucumber Tea Sandwiches
Cucumber tea sandwiches have somehow acquired the aristocratic position of one of the traditional staples of afternoon tea. This is great for the host/ess, as they are simple to prepare.
Tea Party Bee Tips:
To remove extra wetness from the cucumbers, place slices between layers of paper towels before placing on tea sandwiches.
After assembling the following sandwiches, cut in this manner:
Apply light pressure with one hand while slicing off the crusts with a long, sharp knife and cutting into fingers or triangles. Pile neatly onto a serving platter or plate. Cover with damp cloth until time for the tea sandwiches to be served-as close to tea time as possible.
Cucumber Tea Sandwich Recipe

- vinegar
- salt
- bread
Peel cucumber completely or create stripes by peeling every other "row" vertically to the cucumber. Slice very thinly with grater or knife.
Drizzle with vinegar and salt and let marinate for 30 minuets. Drain excess liquid.
Cover a thinly sliced and lightly buttered slice of bread with the cucumbers and top with another slice of bread.
Watercress and Cucumber Tea Sandwiches
- 1/2 cucumber , peeled and thinly sliced about – about 30 slices
- 1/2 cup softened, unsalted butter
- 1/2 cup chopped watercress leaves
- 1/2 cup alfalfa sprouts
- 16 slices thin, but dense white bread
- Salt to taste
In a small bowl, combine the butter and watercress. Add salt to taste. Then spread mixture on one side of each slice of bread. Place the cucumber slices on the buttered side of eight slices of bread. Place alfalfa sprouts on top, about one tablespoon on each, then cover with the remaining slices of bread, placing the buttered side down.
Makes 16 halves
Cucumber and Cream Tea Sandwiches
- 1/2 cucumber , peeled and thinly sliced about – about 30 slices
- 10 oz. softened cream cheese
- 4 tablespoons chopped, fresh chives OR dill
- Juice from ¼ lemon
- Salt and Pepper to taste
- 18 slices of thin, but dense bread – white or light wheat
In a small bowl, combine softened cream cheese and your choice of either the dill or chives. Add lemon juice. Salt and pepper to taste.
Spread Mixture on one side of each slice of bread, then lay cucumber slices on top of eight of those slices. Top with remaining bread, spread side inward.
Makes 16 halves.
