Tea Sandwich Recipe
An egg salad tea sandwich is a good choice for tea parties, especially if you have another tea sandwich selection that has meat in it. This provides an alternate to those who prefer not to have meat.

Egg Salad Recipe
- 6 Hard Boiled Eggs
- 3 Tablespoons Mayonnaise
- 1 Tablespoon Mustard
- 1/8 teaspoon pepper
- 1 dash salt
For hard cook eggs, place eggs in sauce pan and cover
with cold water, bring to a rolling boil over high heat; then reduce heat to medium boil for an additional 10 minutes. Place eggs right away into ice water. This will keep yolks nice and bright yellow.
After chilled, remove eggshells and slice with egg slicer
or cut cut into cubes with a knife.
In a medium bowl mix together sliced eggs, mustard, mayo, salt and pepper.

For our baby shower tea party, we used country white and tomato basil bread. May serve with lettuce.
Makes about 10 large triangles or 20 finger sandwiches.
An egg salad sandwich is versatile and can be adapted to create various recipes.
Try adding any of the following
- Sliced olives to taste
- 1 tablespoon Dijon mustard
- Good pinch of cayenne pepper
- Chopped parsley and/or chives
- 1 small stalk celery, chopped
- 1 Tablespoon onion
- 1/4 Teaspoon balsamic vinegar
