Scones Recipe - Cinnamon Pecan

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 1/2 teaspoons sugar
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon ground cinnamon
  • 5 tablespoons unsalted butter
  • 3/4 cup pecan pieces
  • 1 egg yolk
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

Topping
4 tablespoon melted butter
4 tablespoons crushed pecans
cinnamon

Preheat oven to 425º F (215º C). Soak the 4 tablespoons pecans (for topping) in melted butter, set aside. Combine flour, baking powder, salt, sugar, baking soda, and cinnamon. Mix well. Cut in butter, mixing until crumbly. Form well in center of flour mixture.

In medium bowl, mix together pecans, egg yolk, sour cream, vanilla and pour into well. Stir until soft dough forms, do not over-mix. Knead gently on a lightly floured surface about 15 seconds. Roll out to 3/4 inch thickness. Cut into wedges, rounds or shapes. Place on ungreased baking sheets.
Sprinkle butter-soaked pecans on tops - drizzle any remaining butter over scones. Sprinkle lightly with more cinnamon. Bake 10 to 12 minutes or until golden brown. Makes 8 to 10 scones.
