Lemon Sponge Cake

Lemon sponge cake is always a good choice to serve for a tea party cake as most people like this cake and it satisfies the sweet tooth without being too sweet. The best lemon sponge is moist but not heavy.

Lemon Sponge Cake
Recipe

  • 1 cup sugar 
  • 6 eggs (separated)
  • 2 tablespoons freshly squeezed lemon juice
  • zest of 1 lemon
  • 1 cup sifted flour
  • 1/4 teaspoon salt

Preheat oven to 325°F. Lightly grease and flour a single layer pan.

Beat egg yolks until thick and lemon colored. Gradually beat in the sugar, lemon juice and zest. Fold in half of the stiffly beaten egg whites.

Add sifted flour and salt. Add remaining egg whites.

Bake in oven for 50-60 minutes or until toothpick inserted in center of cake comes out mostly clean.
